A little Quicheish
Day 2 of the 4-day OT marathon, and i'm seriously considering not only
sacrificing 5 hours on my day off, but signing up to come in early on sunday
and monday.
But! I have to talk about food.
Last nights iron nani assembly: I took bacon, a teeny onion, & some ham and
fried it up in my cast iron until nice & carmelized. Then threw in a small
can of mushrooms, the last of the celery, all chopped up, & stirred it
around until it looked cooked. Then I tossed in 1 box of frozen spinach,
thawed, & stirred it around some more.
In the bottom of a big baking pan I dumped the remains of a bag of hash
browns, then dumped the stuff from the frying pan over the top & fluffed it
together with a fork. Dumped some grated cheese over the top, then about 8
or 9 medium eggs & some milk. Baked it in the oven for about 30 min.
Ended up serving it on a slice of bread - when I cut into it, I realized I
hadn't squeezed the extra liquid out of the spinach & so it kinda bled green
on me. The bread was an attempt to keep the dripping under control, but it
worked out really nice what with the sweetness of it & the complex carb-ness
of it as compared to the shredded potatoes.
